This is another really special cooking course by an Italian guest host flying in from Milano just for this weekend, to teach you how to make the perfect original focaccia and panzerotti.
You will be learning how to prepare the dough, topping and baking of a “focaccia barese”, the typical focaccia made in Bari, a city located in Puglia, or more generally “focaccia pugliese”, as it’s typical for this whole Southern region. Tomatoes are part of the original version, there is no focaccia barese without tomatoes! While the dough is raising in the oven, you will also learn how to make panzerotti with the same dough. These can be filled with different ingredients, like mozzarella, ham, tomato, you can just be creative…
Your teacher is Martina, who lives in Milan. Her grandmother was from Puglia, and taught her a lot of other regional recipes. This particular focaccia though Martina learnt from “Mamma Elena” the mom of one of her best friends, Cristina. “Mamma Elena” is also from Puglia, but has lived in the same condominium as Christina for about 16 year. This is a very personal dish passed on from one Italian family to another and now on to you.
This workshop is limited to 8 participants and held in English and Italian.
